Ingredients
- 3 cups flour
- 2 tsp pumpkin pie spice + 2 Tablespoons
- 1 1/2 tsp salt
- 2 tsp baking soda
- 1 tsp baking powder
- 3 cups sugar
- 4 large eggs
- 1 cup vegetable oil
- 1/2 cup orange juice or water
- 1 cup sweetened dried cranberries
- 1 cup walnuts this is optional
- 1 Can (15 oz.) Pumpkin

Instructions
- Combine flour, 1 Tbsp pumpkin spice, baking soda, baking powder, and salt in large bowl.
- Combine sugar, 2 tsp pumpkin spice, eggs, oil and juice in small mixer bowl; beat until just blended.
- Add the wet pumpkin mixture to flour mixture; stir just until moistened. Fold in cranberries and nuts.
- Fill each mini loaf pan no more then half way.
- Bake in preheated 350F oven for 50-55 minutes or until wooden pick inserted in center comes out clean.
- Cool in pans for 10 minutes; remove to wire racks to cool.
