Instructions
  1. Combine rice, onions, green and red peppers, mayonnaise, parsley, salt and pepper in medium bowl.
  2. Pack into lightly oiled 8-inch-diameter ring mold; chill 2 hours or until firm.
  3. Gently invert ring mold onto cold serving plate and carefully turn out rice mixture. (Replace any rice that may come loose from the ring.)
  4. Arrange orange and grapefruit segments around edge of plate.
  5. Arrange chicory leaves and watercress in center of ring.
  6. Refrigerate until ready to serve.

  1. Mash the avocado up with a fork, add the lime juice, season to taste.(Guacamole)
  2. Mix the sour cream, mayonnaise, and taco seasoning mix together. Stir until well blended. (Taco Mix)
  3. On a pretty round glass plate, layer the following ingredients, extending almost to the edge and making layers about 1/4 inch thick. 1.) Bean dip 2.) Guacamole dip (Avocado) 3.) Taco Mixture 4.) Grated Jack Cheese 5.) Grated Cheddar Cheese 6.) Chopped Tomatoes 7.) Chopped Green Onions.

  1. Blend four and oil, add the water and blend with flat potato masher. Heat, stirring constantly and add the accent, salt, McKays seasoning. Blend well.
  2. Add the Velveeta, mayo, and lemon juice. Stir until well blended.
Recipe Notes

Variations:

1 - 2 cups of water may be added for a thin sauce (like that used on scalloped potatoes.)

Add a little marg. or butter with 2 Tbl lemon juice to use on vegetables like broccoli or creamed asparagus.

  1. In a Dutch Oven or 4 quart saucepan, bring about 10 cups of water to boil. Reduce heat to medium and add potatoes. Cook for about 3 minutes. Add Rotini to the potatoes and continue to cook about 15 minutes. Drain and rinse with cold water to cool. Drain well.
  2. In a large bowl, combine the cooked potatoes and rotini, bell pepper and onions.
  3. In a small bowl, combine the dressing ingredients and blend well. Add to salad, toss to coat. Cover and refrigerate at least one hour or until serving time.
