  1. If you're making the coutes, it's a good idea to get them done in advance and out of the way. You can fry them, but
  2. done in advance and out of the way. You can fry them, but I think they're much nicer baked to a crisp golden crunchiness in a slow oven.
  3. Set the oven to 300˚ F.
  4. Stamp circles in the bread with a large pastry cutter, spread on both sides with butter and put them on a baking sheet. Bake for 1 hour, or until completely crisp and golden. Cool. These will keep in a pan for a few days.
  5. To prepare the mushrooms, cut off any stalks so that the surface is level, then wash the mushrooms and pat them dry on kitchen paper. Fry them on both sides with olive oil and drain well. Season them with salt and pepper, then leave on one side while you make the stuffing.
  6. Melt the butter in a medium-large saucepan.
  7. Add the onion and fry for about 7 minutes, until soft.
  8. Chop up any pieces of mushroom stalk, add these and cook for a minute or two longer.
  9. Remove from the heat and add the cooked chestnuts, breaking them up a bit as you do so to make a mixture which holds together but has some chunky bits in it.
  10. Add a dash of fresh lemon juice, and salt, pepper and grated nutmeg to taste.
  11. To serve the dish, Preheat the oven to 400˚F or preheat the grill to high.
  12. Put the croutes on a baking sheet or in a shallow casserole, then place a mushroom on each one, black side up.
  13. Spoon the stuffing mixture on top.
  14. Bake or grill until heated through -- about 10 minutes under the grill, 15-20 minutes in the Oven.

  1. Preheat oven to 350˚F.
  2. Make a white sauce of the butter, flour and cream.
  3. Add salt, pepper and granulated bouillon dissolved in just a little hot water. Add the mushroom soup.
  4. Saute the mushrooms in a little butter and add with the chestnuts.
  5. Place in a buttered casserole and top with cheese.
  6. Place in a 350˚ F. oven and heat for 20-30 minutes, until cheese is melted and dish is bubbly.
  7. Serve hot.

  1. Combine broccoli, onions, and mushrooms in greased 10-inch microproof quiche dish or pie plate. Cover and cook on HIGH (maximum power) 5 minutes.
  2. Blend eggs and half and half in medium bowl. Add rice, cheeses, salt, and pepper; stir. Pour mixture over vegetables; stir gently. Cook uncovered on MEDIUM (50% power) 9 to 11 minutes, or until quiche is set. Let stand 10 minutes.
  3. Garnish with tomato rose.

  1. Preheat the oven to 400˚ f.
  2. Bake the potato in the oven for about 1 hour until cooked: (alternatively microwave on high for approximately 6 minutes).
  3. Meanwhile heat the butter in a small saucepan and saute with shallots or onion for about 5 minutes until softened.
  4. Add the mushrooms and cook for 2 more minutes.
  5. Add the curry powder and stir well.
  6. Blend the tomato puree and yoghurt. Add the chopped mint if using, and season with salt and pepper.
  7. Stir into the mushroom mixture and heat gently for one to two minutes stirring constantly.
  8. Split the baked potato and fill with the curried mushroom mixture.
  9. Garnish with a sprig of mint.

  1. Bend back outer petals of artichokes until they snap off easily near base. Edible portion of pedals should remain on artichoke hearts. Continue to snap off and discard petals until central core of pale green petals is reached.
  2. Cut off stems and top 2 inches of artichokes; discard. Trim outer dark green layer from artichoke bottoms. Cut artichokes in half lengthwise. Cut out center pedals and fuzzy centers. Cut each half in fourths lengthwise. Dip or rub all surfaces with lemon juice.
  3. Saute onion and garlic in olive oil; stir in prepared artichokes, sugar, and tarragon.
  4. Add wine and water and cook until artichokes are tender; salt and pepper to taste.
  5. Stir in mushrooms and cook until mushrooms are tender.
  6. Stir in tomato; cook until tomato is thoroughly heated.

  1. Saute the carrots slowly in 2 ounces of butter until tender. Chop coarsely and reserve in a large mixing bowl.
  2. Over high heat, saute the mushrooms in 1-ounce of butter for 2 minutes. Coarsely chop and add them to the carrots.
  3. Saute spinach in 1-ounce of butter. Coarsely chop and reserve separately. When the spinach is cool, add 1 egg and mix thoroughly.
  4. Beat together the remaining eggs and the cheese. Combine this mixture thoroughly with the carrots and mushrooms. Add salt and pepper. Taste and correct seasonings, if necessary.
  5. Preheat oven to 400 degrees F.
  6. Line the bottom of an 8 1/2 by 4 1/2 by 2 1/2-inch loaf pan with parchment paper. Butter the pan and the parchment with the remaining 1-ounce of butter.
  7. Fill the pan with half the carrot mixture, cover with the spinach, and top with the remaining carrot mixture. Top with another piece of buttered parchment paper.
  8. Place in a bain-marie (hot water bath), and bake in oven for 1 hour and 15 minutes, or until a knife inserted into the center comes out clean.
  9. Invert onto a warm serving platter and remove the foil. Slice and serve immediately.

  1. Quarter the potatoes and throw them in a big pot of boiling water. When they are cooked but still firm, take them out and mash them (with milk if you like, but not too much).
  2. While you are waiting for the potatoes, slice the mushrooms, onions, leeks and garlic and fry them in a little oil in a sauce-pan over medium heat. Add whatever sauces you like to them (red wine, soy sauce, rice wine vinegar, etc). Try to retain any liquid in the pan, this will become "gravy" for the pie.
  3. When the onions are translucent and the mushrooms are brown around the edges, turn off the heat. Combine the onions/mushrooms with the (defrosted) diced veggies and the TVP/seitan and mix it all together. (NOTE: you may want to brown the TVP/seitan before adding it in depending on what you use.) If you are using cheese add a little to help give more flavor and to help it stick together.
  4. Mix in the mustard in small amounts, sampling until you get a taste you like - too much mustard will be *very* noticeable. Spread the veggie/TVP mixture on the bottom of a 9x13 (lasagna-sized) baking pan.
  5. Top with the potatoes, smoothing them out at the top. Cover with cheese if desired. Note: gauge things by eye so you do not overfill the pan! If you have too much, try making a couple of smaller pies in round pie tins.
  6. Bake in a convection oven at 375 for 30-45 minutes or until cheese on top turns a golden brown. Serve immediately (but remember, its hot!) Makes: A whole ton, probably enough for 10 people if you make a side dish as well. Store excess Shepherds Pie in the refrigerator and reheat in the microwave.
